1. Ön egy európai uniós program keretén belül külföldi diákokkal dolgozik együtt egy magyar cukrászüzemben. Gyúrt élesztős termékeket készítenek. Mutassa be a külföldi diákoknak a gyúrt élesztős brióstészta anyaghányadát, a tésztakészítés műveleteit, valamint a kalács készítését, sütését!

|1 db tojás a lekenéshez |1 egg
|3 dkg cukor a briósok tetejére |3 dkgs of sugar to the top of brioches

A lisztet a dagasztó tálba szórom . Közepében kis fészket alakítok ki . Beleteszem a porcukrot , amire rámorzsolom az élesztőt, majd ráöntöm a meglangyosított tejet. Hagyom, hogy felfusson (15 perc). Hozzáadom a többi hozzávalót, majd sima tésztává gyúrom . Cipót formálok belőle és 20 percig meleg helyen, kelesztem. A tésztát átgyúrom 32 darabra, vágom és mindegyiket 15 cm-es rudakká sodrom. Brióssá formázom őket .

I put the flour into a sprayed bowl. In the middle form a small „nest”. I put the icing sugar, which I crumble the yeast, then I pour the warm milk. I let the milk to warm (15 minutes). I add the remaining ingredients, and then knead it together. I form a loaf of bread and I leave rising in a warm place for 20 minutes. Then I knead the dough, I form 32 pieces of it, and I drift it 15 cm bars. Finally, I shape them to brioche.
Somogyi kalács készítése
|1 kg liszt, |1 kg of flour,
|1-2 dl tej, |1-2 dl milk
|3 dkg élesztő, |3 dkg of yeast
|6 tojássárgája, |6 egg yolks,
|15 dkg cukor, |15 dkg sugar,
|egy csipetnyi só, |a pinch of salt,
|5 dkg vaj. |5 dkg butter.

The candied walnuts and poppy production for stuffing. For the grated 30 grams of poppy seed or walnut give 20-20 grams of vanilla sugar and 3-3 tablespoons lemon juice, 1-1 tablespoons grated lemon and 4-4 tablespoons of milk. Mix well and layer the dough. Sift the flour into a bowl, crumble the yeast, dissolve the sugar in milk and salt and add the egg yolks. The milk is mixed with the additives, and pour in the flour. Make soft dough rings. The dough should be uniformly pulled out. This operation is carried out until the dough will not be blistered. Then at the bottom of the dough, sprinkle the top with flour and let rise in warm. If leavened, make small loaves of it, roll it out and fill with sugared walnuts, poppy seeds, sugar, cinnamon and raisins. Roll, and put into a greased baking tray, and brush with egg yolks and rest for 15 minutes. Fry in preheated oven for a nice red. The coils are bent in different forms. Wrap the cake into the shape of a horseshoe, round shape.

A cukrozott dió és mák készítése tölteléknek. A megdarált 30 dkg mákhoz vagy dióhoz 20-20 dkg vaníliás cukrot 3-3 evőkanál citromlevet, 1-1 evőkanál reszelt ciromhéjat, és 4-4 evőkanál tejet adunk. Jól összekeverve rétegezzük a tésztára. A töltelék akkor is jó, ha a dióhoz vagy a mákhoz ízlés szerint csak porcukrot adunk. A lisztet tálba szitáljuk, az élesztőt rámorzsoljuk, a tejben feloldjuk a cukrot és a sót, és hozzáadjuk a tojások sárgáját. A tejet az adalékanyagokkal összekeverjük és ráöntjük a lisztre. Lágy tésztát gyúrunk. A tésztát a kidolgozás során a dagasztóedényből egyenletesen kifelé kell húzni. Ezt a műveletet addig végezzük, amíg a tészta hólyagos nem lesz. Ezután a tésztát alul, felül megszórjuk liszttel és langyos helyen kelni hagyjuk. Ha megkelt, kis cipókat készítünk belőle, kinyújtjuk és megtöltjük cukros dióval, cukros mákkal, fahéjas mazsolával. Feltekerjük, kizsírozott tepsibe tesszük, 15 percig pihentetjük és tojássárgájával megkenjük. Előmelegített sütőben szép pirosra megsütjük. A tekercseket különböző formába hajlíthatjuk. Tekerhetjük a kalácsot patkó alakúra, kerek formába.
