The term Floribbean arrived in culinary lingo within the last 10 years. The word Floribbean comes from the combination of Florida, Caribbean, and South American cultures (Chef Jon, 2013). Floribbean cuisine roots go back to when the Spanish were exploring the New World (Nemes, 2007). Ponce de Leon and De Soto introduced cattle and pig to an area that was mainly fish and wild game. The Native Americans taught the Spaniards about the fruits and vegetables in the area. These include plantains, hearts of palm, and yucca fruit. The Native Americans also taught the Spaniards how to fish and prepare seafood. The blended cooking style of the Spanish and French is the base of Floribbean (Chef Jon, 2013).. Floribbean cuisine influence comes from the Bahamas, Cuba, and Jamaica. Floribbean variety of taste stems from Cuba, the Dominican Republic, and Haiti.
Floribbean cuisine is called “New World Cuisine”. The food is infused with mango, citrus flavors, and Florida's exotic fruits. The use of local produce, fish, and seafood with traditional uncommon spices make the food one of a kind (Chef Jon, 2013). In the 1950’s, when Cubans came to Florida is when the most influence of Floribbean Cuisine came about (Nemes, 2007). Cubans mixed Spanish flavors with Caribbean ingredients. More influences came from the Dominican Republic, Haiti, Nicaragua, and other South American countries.
There is a huge emphasis on using fresh food in Floribbean cooking (Nemes, 2007). There is a large variety of fruits and fruit juices used in the cuisine. Floribbean Cuisine uses ingredients such as calabeza, banana leaf, banana pepper, boniato, adobo, avocado, annatto, coconut, grouper, and guava, heart of palm, passion fruit, and plantains. Some Floribbean dishes include conch chowder, plantain chips, blackened grouper, and chicken with tamarind ginger sauce, Heart-of-Palm salad, and Ceviche of gulf shrimp with Floribbean slaw.
Floribbean cuisine is popular in Miami, Florida. It is also popular throughout Florida. There are many Floribbean Restaurants throughout the state. Floribbean cuisine is one of the most creative cuisines in America. With the culture and ingredients it uses, it is expected. The cuisine is appearing in magazine and on cooking shows.
Floribbean cuisine is good. It does require some getting used to if you are not familiar with the style of eating. People are custom to the food of their general regions. Floribbean cuisine is bold and exciting. It is colorful and has spice. The ingredients used to prepare the food are not the normal ingredients people use in other parts of The United States. Therefore, it would be different experiencing it for the first time. It is a good experience, and one that your taste buds will remember. If you are ever in Florida, make sure you stop by a Floribbean restaurant and try the food.
Floribbean Cuisine is not one that we really touch on in American Regional. This is understandable because it is not as popular as other regions. Being that it is an up and coming cuisine, there should be some sort of education given to students about it. Besides students are missing out. They need to experience Floribbean cuisine.

...My sister and I were the first ones to arrive at El Pueblito Patio located on 1423 Richmond Avenue Saturday morning around 11 a.m. Since we were so early we were lucky enough to be seated in one of the many white linen cabanas. This restaurant is known in Houston as a cultural, Latin American-Caribbean fusion. As we glanced over the menu, several delicious items popped up, such as redfish, salmon, trout and chicken often paired with a fruit relish, yellow rice and vegetables. The waiter brought us free appetizers, two bowls, one red salsa and the other a yellowish color salsa with some green specks. My sister took a bite out of the yellow salsa, I bit into the corn chips and red salsa. We were both surprised to find out that we enjoyed the tastes of the salsas which were uniquely different. However, we could not figure out what special ingredients were in the salsa but as soon as our waiter arrived we immediately determined the secret as to what the yellow in the salsa was and that was pineapple and a jalapeño blend which was the green specks in the salsa. ...Chalon A few years ago I went to a restaurant called Chalon and as I was walking to the door I saw it said 'Authentic Japanese Restaurant.' This started to make me think about sushi, sashimi and all the other raw food. As I opened the door I was asked how many people were eating, since it was only 6:30pm, there weren't a lot of people there. As we were walking to our seats I was wondering why nobody was eating any sushi or sashimi. Then we were given our menus and I realized that they don't sell any sushi! This was the reason I chose this restaurant. How could Chalon call itself an authentic Japanese restaurant when they don't even sell sushi?  Chalon is a family restaurant, which means crying babies and whining children.
