Vanilla and Chocolate Cupcakes

Ingredients:
2 tbs cocoa powder
2 tsp vanilla extract
1 tbs water
200g plain flour
200g caster sugar
1 ¾ tsp baking powder
125ml milk
110g butter
2 eggs

Method:
Preheat the oven to 180 C / Gas 4. Grease and flour a cupcake tin, or line with paper cases.
Stir together the cocoa and water to form a paste. Set aside.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla.
Combine flour and baking powder, add to the creamed mixture and mix well. Gradually stir in the milk until the mixture is smooth.
Spoon half of the cupcake mixture into a second bowl. Stir in the cocoa mixture till well combined. Spoon mixture into the prepared tin, filling cases 3/4 full. Repeat with the vanilla cupcake mixture.
Bake cupcakes for 20 to 25 minutes. Cupcakes are done when they spring back to the touch. Let cool completely before topping with your favourite icing.

Skinny lemon cupcakes with drizzly icing

Ingredients:
200g/7oz self-raising flour
1 tsp bicarbonate of soda
75g/3oz golden caster sugar
100g/3½oz blueberries
1 unwaxed lemon, zest finely grated
2 free-ranged eggs
150ml low-fat natural yogurt
2 tbsp semi-skimmed milk
50ml sunflower oil

For the lemon icing:
100g icing sugar
4 tsp fresh lemon juice

Method:
Preheat the oven to 180C/350F/Gas 4. Line a 12-hole deep muffin tin with some non-stick paper cases or folded squares of baking parchment.
Sift the flour and bicarbonate of soda into a large bowl and stir in the sugar, blueberries and lemon zest. Make a well in the centre. Beat the eggs with a large whisk until smooth, then beat in the yoghurt, milk and oil until well combined. Stir into the flour mixture with a large metal spoon until very lightly mixed.
Working quickly, divide the batter between the paper cases. Bake in the centre of the oven for 16–18 minutes or until the cupcakes are well risen and golden brown. Transfer them to a wire rack and leave to cool.
To make the lemon icing, mix the icing sugar and lemon juice in a small bowl until smooth and runny. Using a spoon, drizzle the icing over the cupcakes and leave to set for at least 30 minutes before serving.

Chocolate and Orange Cupcakes

Ingredients:
120g/4oz plain flour
140g/5oz caster sugar
1 tsp baking power
40g/1½oz unsalted butter
50g/2oz dark chocolate, melted
1 free-range egg
125ml/4fl oz milk
1 orange, juice only
3 tbsp granulated sugar

Method:
Preheat the oven to 170C/325F/Gas 3. Line a 12-hole muffin tin with paper cases.

Mix the flour, sugar and baking powder together in a food processor. Add the butter and pulse until combined.

Whisk the melted chocolate, egg and milk together in a jug.
Stir the chocolate mixture into the flour mixture until just combined.

Spoon the mixture into the cases and bake for 15-20 minutes, or until risen and golden-brown and a skewer inserted into the middle comes out clean. Remove from the oven and set aside to cool for 10 minutes

Meanwhile, mix the orange juice and granulated sugar together in a bowl. Carefully pour the orange juice mixture over the warm cakes and set aside to cool completely.

Strawberry and Cream Cupcakes

Ingredients:
200g/7oz unsalted butter, softened
200g/7oz caster sugar
4 free-range eggs
200g/7oz self-raising flour
4 tbsp good-quality strawberry jam
250ml/9fl oz lightly whipped double cream
250g/9oz strawberries, hulled
Icing sugar, for dusting

Method:
Preheat the oven to 200C/400F/Gas 6. Line two 12-hole muffin trays with paper cases.

Cream the butter and sugar together, preferably with an electric whisk, in a large bowl until the mixture is light and fluffy. (This can take 5-7 minutes, so this stage should not be rushed.)

Beat in the eggs, one at a time, until well combined. (If the mixture looks like it is curdling add a spoonful of the flour.) Fold in the remaining flour with a metal spoon until you have a soft, smooth mixture.

Pipe or spoon the mixture into the paper cases until half full, add half a teaspoon of jam and then cover with the remaining cake mixture. The finished cake case should be about three-quarters full. Bake in the oven for 12-15 minutes, or until the cakes are pale golden-brown and spring back when pressed gently with a finger. Remove the cakes from the oven and set aside to cool on a wire rack.

Using a small knife make a well in the top of each cake by removing a disk of cake. Fill this well with whipped cream and top with a strawberry. Serve with a generous dusting of icing sugar.

Simple Shortbread

Ingredients:
250g (9 oz) plain flour
1/4 teaspoon salt
1/4 teaspoon baking powder
225g (8 oz) butter
100g (4 oz) caster sugar

Method:
Preheat oven to 170 C / Gas mark 3.

Sift together the flour, salt and baking powder. In a large bowl, beat the butter and sugar together until light and fluffy. Add the sifted dry ingredients and mix to combine. Chill until dough is easy to handle, about 10 minutes.

On a lightly floured surface roll dough out to 5cm (1/4 in) thick. Cut into desired shapes and place on ungreased baking trays.

Bake in preheated oven for 10 to 15 minutes.
