Jambasta is a dish that consists of many different ingredients. To make this dish the absolute best it can be you will need the following dry ingredients; kosher salt, one pound of penne pasta, ground black pepper, and two tablespoons of flour. The recipe also calls for several different types of meat such as eight ounces of Andouille sausage, eight ounces of chicken breast, and eight ounces of medium shrimp. There are also several other ingredients needed such as two tablespoons of unsalted butter, four cloves of garlic, two celery sticks, one onion, one red bell pepper, two tablespoons of fresh thyme, fourteen ounce can of crushed tomatoes, and two scallions. For liquids you will need two tablespoons of extra-virgin olive oil, one cup of beer, one cup of chicken stock, two tablespoons of hot sauce, one cup of chicken stock, and half a cup of heavy cream. After gathering all of these ingredients the next step is to begin the cooking process by prepping your ingredients.
Preparation for this dish may take some time as there are many things to do but each item is essential to the overall outcome of the meal. There are several different things that need to be done to prep the ingredients for this dish. First, cut eight ounces of Andouille sausage and two scallions into slices. Next, chop the celery, garlic, onion, thyme and bell pepper into small pieces. The next step is to dice eight ounces of uncooked chicken breast. Finally clean and remove the tails from eight ounces of medium size shrimp. After completing the preparations needed for the dish we are finally ready to begin cooking.
Though there are many steps needed to make Jambasta, finally getting to smell all of the ingredients mixing while cooking is the best. To begin the cooking process you will need to boil water, add salt, cook the pasta until al dente, and then drain. Next, heat a deep skillet over medium heat then add butter, oil, and Andouille sausage. Brown the sausage for between two and three minutes then remove from the pan. Next, add the garlic, celery, onion, and bell pepper to the hot pan. Sauté the ingredients for five to six minutes then add salt, pepper, and flour while continuing to cook about two minutes. At this point whisk in one cup of beer and continue cooking for another two minutes to cook out the beer. Once this has completed add the chicken stock, hot sauce, thyme, and tomatoes to the pan. Bring the liquid to a bubble before adding the chicken and shrimp to the pan. Continue to cook the mixture for six to seven minutes before stirring to mix in cooking juices and then add cream. Finally, drain the pasta and add it to the sauce and top with chopped scallions and sausage. Jambasta is a Louisiana-style jambalaya with pasta that is sure to leave all of your dinner participants begging for the recipe. Though there are a fairly decent amount of ingredients and what many may see as a lot of prep work, the dish is sure to satisfy even the toughest of critiques.
