Stocks

In the stock recipe that my brigade made we were supposed to make two different types of stocks, we made white stock and brown stock. The difference between the two is one is just chicken bones and the other is chicken bones that have been sitting in the oven till they are golden brown to give the stock more flavor. Throughout the process of making the recipe our brigade went through many difficulties such as not using our time wisely and cutting some vegetables bigger or smaller than they were supposed to be. The good thing about cooking is learning from your mistakes though, we may have messed up a few times but now if we go to make this recipe again or even try to make it at home next time we will know the outcome and know the correct way to finish the product. Making the stock was a little similar to some of the other recipes we’ve completed, it was very similar to the gardinera recipe we made because in the Gardinera recipe we diced vegetables to a certain size as well as the stock recipe.All in all, as a group i feel we did pretty good, we didnt finish on the correct time that we were supposed to and we may have cut some vegetables wrong but the stock turned out ok, and we ended up draining the bones and vegetables from the stock so it truly didnt matter. In the end i feel Brigade 2 worked to its full potential and will for sure succeed on working more efficient on the next project we will do.
