Roman Cucina was founded in 2001 by two Italian brothers David and Giovanni Roman. The brothers were inspired by guests and family who would come over for dinner on Sundays and enjoy there company and delicious food. The brothers took the advice into consideration and decided to open their first restaurant in sunset beach. Being family inspired and oriented the recipes and menu was prepared by their mother, sisters and grandmother, who had the authentic Italian flavor which is used to this very day. After the first restaurant being such a hit they decided to bring in other family and siblings to help open and run another restaurant. Today Roman Cucina has four locations, Sunset Beach, Fullerton, Newport, and Laguna Hills. It employs over 200 people in its Southern California region, each location sharing the same authenticity, culture, service, and leadership which they strive to improve each and every day.
Theme One- Organizational Culture Organization culture is defined: Pattern of shared basic assumptions learned by a group as it solved its problems of external adaption and internal integration, which has worked well enough to be considered valid and, therefore to be taught to new members as the correct way to perceive, think, and feel in relation to those problems (Schein, 2010) pg. 142. At Roman Cucina there are standards and specific procedures that stem from the owners, passed down and taught to employees to provide exceptional service while maintaining the organizational culture from the image and ambiance portrayed, to the service and attitude provided. Employees work together as a team or “family” to assist and train each other. Even the managers will perform lower level tasks to set an example for employees and to improve the overall smoothness to the restaurants day to day business tasks.
