Amie cycled in from Camden Town with her toy poodle in the basket .Today was going to be a busy day after she ‘d fired the waiters who annoyed her yesterday .Amie loved new people and was looking forwad to meeting the new applicant .None of them from job centre this time as her advert had only gone into commuter’s paper .Also louie was coming in from head office to conduct her first appraisal today too.Why hadn’t she remember to fill in her part of that form ?It was going to be a very busy day ! Louie remembered that he had just signed off hussain ‘s first real developmental training where he was off to train with the Paris chefs.They discussed which of the staff could cover for him.None would work Hussain’s hours but there were several who managed his signature dishes.Hussain’s recommended Luigi and Elke as two of the most competent and worthy of his praise.He especially liked Elke who listened and took in what he said adapting her cooking to his comments.He wanted her to have more training with luigi and sanjay but there wasn’t enough time or money. “I’ll have to teach them myself “smiled hussain but he looked worried .He kept an eyeon his team as they prepared for the lunch rush and seemed to notice so many little detail.”what Amie like to work with ?”Louie asked casually.Amie is Amiet that is all “said Hussain as he turned to advise the pastry chefs. At Amie’s appraisal louie was careful to ask her what she thought of her job as restaurant manager?Amie had only had a one day training induction before taking on the busy team but as she had been supervising before it didn’t seem like such a big step and she had interviewed very well. At last a chance to put things right thought Amie as she outlined how difficult the West End customers were and how her staff had refused to work overtime so she had sacked two of them and that she wanted Elke gone as she was giving the restaurant a bad reputation since she wasn’t bubbly enough and customers could see the open plan kitchen . Amie was keen to point out that she had saved money by taking the waiting staff tip jar money off the staff wages but the bar staff claimed they never had any tips Amie had also cut the pay of the kitchen porter so that the cleaners now earned more then him . Waiting staff paid penalties if they made mistakes on the floor ,although kitchen staff only answered to Hussain who did not implement this harsh regime . Hussain was always celebrating somebody’s success whereas Amie never seemed to praise or offer a reward .Still if she kept this up Amie would win a costcutter bonus again this month .Before he mentioned the problem he had noticed ,louie asked about the new job advert .Amie was pleased that he had noticed her taking her own initiative and she told him she was looking forward to selecting some new staff today .”I have got rid of all the old forgeys, the boring ones and the fat ones” she smiled.They don’t need any skills in fact the ones who have experience always think they knew it all so I”ll take new people who are charming instead and train them up my self.”Louie asked about the training “oh just watching how we do things around here –it’s quite an education “. Louie was still reeling after he had given Amie some feedback.He suggested that they interview the new staff together so that he could help her with her interview technique. Amie was a bit put out when she asked her what questions she was going to ask as she had no intention of asking the same question over and over .However as she asked her what tasks she would use to assess the applicants she started thinking about and she had one or two very good ideas. Louie even heard her say “thank you” to Selma when she brought some lunch. Amie had great energy and was making a success of the restaurant as far as drawing in diners during a recession .She had creativity. Flair and was good with awkward customers but really very unkind to the staff.Staff were leaving and replacements were not always staying .Amie was bright but louie realised that Essence had let her down. He was thinking about how to get Essence back on track and Amie back in line with the kinder , more ethical employer Essence were trying to be .
