Introduction

If you came across this cookbook, chances are you’re sick and tired of feeling slovenly in the middle of the day, can’t bear to see yourself in the mirror, still paying off those medical bills or just need a new lease on life. Well, you came to the right place. The purpose of this Paleo inspired recipe eBook is to help you overcome those issues AND live your life with a spring in your step.
What is a Paleo Diet?
Basically, a Paleo diet refers to the ‘meals’ that we used to eat back in the day, and I mean WAAAYYY back by the way. Think Stone Ages and cavemen. In other words, this diet will help you shed those pounds via food items that were available during the Paleolithic era such as meat, fish, eggs, vegetables, berries, other assorted fungi etc.
That’s right. If you cannot hunt or gather it, you can’t eat it. That excludes man made items like processed sugar, salt, grains, dairy products and fast food!
Don’t worry. You don’t need to dust off that hunting rifle to adopt this diet. Implementing a new diet can be difficult, but with the easy and quick recipes given in this recipe book, you can start living healthy in no time. Even if you’ve never gone on a diet before, just stick to the simple-to-follow meal plans and you’ll not be disappointed.
Of course, your particular preferences have also been taken into account. The recipes are very easy to follow and are flexible enough to allow you to re-create them any way you want to. All of the ingredients used can be easily found in your local grocery store and each dish is so delicious that you’ll keep coming back for more!
What you Will Find in this Recipe Book
The recipes within this book were created keeping in mind the diverse tastes of a globetrotting foodie. In other words, no matter which background you hail from, you will not be disappointed with the given recipes. Since this is a Paleo diet inspired recipe book, you will not find any grains, legumes, added sugar or refined vegetable oils in the ingredients. You’re better off staying away from them anyway. On the other hand, we have incorporated ingredients that our bodies need to evolve naturally such as (clarified) butter fat, vinegar.

To accommodate that sweet tooth, we have also included delectable sweet treats that you will not feel guilty gobbling up. Yes! We have successfully debunked the myth that Paleo diets are tasteless and generally blah! By using minimum amount of ingredients and organic produce (not the man made dairy ones) we have collected a number of sweet delights that will create a party in your mouth without adding on the pounds!

Red Meat

Beef Short Ribs
Ingredients
* 6 beef short ribs. * 1 fennel (top removed and core diced). * 1 leek (green portion removed and white portion cut into 1-inch pieces). * 2 onions (chopped). * 6 celery stalks (cut into 1-inch pieces). * 2 carrots (cut into 1-inch pieces). * 3 cloves garlic (minced). * 2 tbsp tomato paste. * 6 cups beef stock. * 1 bottle dry red wine. * Some rosemary sprigs. * Some thyme sprigs. * Cooking fat. * Sea salt and freshly ground black pepper to taste.
Preparation
* Preheat the oven to 400 F. * Place the ribs on a baking sheet covered with foil and season them with the salt and pepper. * Place the tray in the oven to roast for 15 minutes. * Heat a large pot or your Dutch oven on medium heat. * Add the fennel, leek, onion, celery and carrots in the pot along with some cooking fat and cook for 15 minutes. * Add the garlic and cook for another 2 minutes. * Add the red wine and tomato paste. * Add salt and pepper for seasoning and bring the concoction to a boil until it reduces by half (about 10 minutes). * Add the roasted short ribs in the pot or oven along with the beef stock. * Bring to a simmer and cover the pot or oven lowering the heat to 300 F (2 hours). * Once the meat is done, remove it from the pot and set it aside. * Take out the thyme and rosemary from the liquid and bring it to a boil for 20 minutes (uncovered). * Let it simmer till it is reduced to your preferable consistency. * Add the meat to the liquid once again before serving.

Stuffed Bell Peppers with Tomato Sauce
Ingredients
* 6 bell peppers, tops removed and seeded. * 1 lb ground beef. * ½ cup onion, chopped. * 1 tbsp garlic, minced. * 1 egg. * ½ cup almond sour. * ½ tsp dried oregano. * ¼ tsp dried basil. * Sea salt and freshly ground black pepper to taste. * Tomato sauce. * 1 cup canned tomato sauce. * ¼ cup water. * 1 tbsp balsamic vinegar. * 1 tsp homemade or Dijon mustard. * ¼ tsp dried oregano. * ¼ tsp dried basil. * ¼ tsp garlic powder. * Sea salt and freshly ground black pepper to taste.

Preparation * Preheat the oven to 350 F. * Add the bell peppers to some salted boiling water and leave it for 4 minutes. * Mix the ground beef, onion, egg, almond sour, oregano, basil and garlic in a bow together. * Add salt and pepper to taste. * Take the drained bell peppers and stuff the ground beef mixture in them. * Make the sauce by mixing the tomato sauce, water, vinegar, mustard, oregano, basil and garlic powder. Add more salt and pepper according to taste. * Take some of the tomato sauce and spread it out on a baking dish. * Place the stuffed bell peppers on top and add the remaining sauce on top. * Place the tray in the oven for 50 – 60 minutes.

Paleo Pizza: The ‘Meatza’
Ingredients
* 1 lb lean ground beef. * 1 lb ground pork. * ¼ cup onion (finely chopped). * 1 clove garlic (minced). * 1 egg. * Sea salt and freshly ground black pepper to taste.
Toppings
* 6 slices bacon (cut in 1-inch pieces). * ¾ lb button mushrooms (sliced). * 1 cup bell peppers (thinly sliced). * 1 cup sugar-free tomato sauce. * 1 tsp dried oregano. * Sea salt and freshly ground black pepper to taste.
PREPARATION
* Preheat the oven to 450 F. * Mix the ground meat, onion and garlic in a bowl. * Spread the entire concoction on 1 16 inch pizza pan. * Pop in the oven for 10 minutes. * In the meantime, heat a medium frying pan over medium heat and cook the bacon till it goes soft (5 minutes). * After they go soft, add the mushrooms and continue to cook for another 2 – 3 minutes. * Take the crust out of the oven and drain the juices (you can use them for other dishes). * Heat your oven broiler. * Take the crust and spread the tomato sauce over it. * Add the cooked bacon, mushrooms and bell peppers on top of the sauce. * Sprinkle the oregano on top. * Pop the pizza under the broiler until it start5s to turn brown.
