Definition
Epistemology is a branch of philosophy that investigates the origin, nature, methods, and limits of human knowledge
(http://dictionary.reference.com).
As the study of knowledge, epistemology asks what the sources of our knowledge are and examines the structure and limits of knowledge (Steup, 2005).

Example
Memory can be defined as listening to a list of numbers and then remembering it.
But we know that we have remembered something when we are asked what the list of numbers is and we are able to repeat the information back.
Therefore listening and retention can be epistemologies of memory. Theory

A theory is an organized set of concepts that explains a phenomenon or set of phenomena
(Gerrig & Zimbardo, 2002).
Theories present concepts or ideas that are testable and supported by evidence, and are based upon a
hypothesis
