Ingredients: * 200g seedless dates * 2 dl water * 200g butter * 2 eggs * 1 1/2 dl sugar * 1 table spoon of vanilla sugar * 1 dl sour cream * 3 1/2 dl flour * 2 tea spoons of baking soda * butter and bread crumbs for the tin
Heat up your oven to 170 degrees. Chop the dates into little pieces and boil them in water (2dl) till they are soft. Remove the kettle from the stove and add butter. Mix it with till the butter has melted to the mixture.
Mix sugar and eggs together and whisk it well (you are looking for a whipped cream-ish texture). After this add vanilla sugar and sour cream. Mix baking soda with flour and add it to the (egg sugar) dough. Add the date butter mixture to the dough in two pieces and mix.
Line a cake tin with butter and spread bread crumbs all over it. Pour the dough to the tin and put in the oven for about an hour (you can try to poke it cake with a toothpick to see if it’s ready.)
Take the cake out of the oven and let it rest for half an hour. Turn the cake over and VOILA ! You can also add icing sugar on top.
Now kids, I had to try this 3 times before I got it perfectly right! The first time was a major disaster, second time a bit better but the third time, oh my days, IT WAS THE BEST. A wonderful dessert for ramadan and for everyday all year around ! Let me know if any of you decide to try it :) Also I’m a bit bugged cause I couldn’t fit all the pics I wanted to the photoset. Anyway I hope this was helpful please don’t mind the typos.
