Baconscheiben überlappt auslegen in einer Breite, die der Länge des Filetstücks entspricht. Beide Enden des Filets je nach Dicke mit ein bis zwei (evtl. halbierten) Baconscheiben abdecken, das Filet auf die ausgelegten Scheiben legen und einrollen.
