1. Should a small hospitality operation prepare detailed purchase specifications, or should it prepare product specifications? Why? Please provide examples. What are some advantages and disadvantages of purchasing only from socially responsible suppliers?

Product specification, also known as purchase specification, is similar in the majority of its aspects. The only difference is that there is no understanding of what the buyer wants or of its supplier services. Small hospitality operations prepare a product specification whereas larger operations organize purchase specifications.3 Reasons to do this are that smaller industries do not want to make a long-term commitment to primary sources and intermediaries because they choose to look for …show more content…
Sysco believes in what they call a “Just In Time” procedure. What this means is that when their new order comes in, they must be almost or out of the supply from the last shipment.4 When the shipment comes in if there is extra inventory that was not previously sold it may become more of a liability then an asset. This may happen because the product will sit in a warehouse making Sysco loose money since they cannot sell that specific item.
