“I should have stayed in my own bar and had a beer,” Mazen Hajjar thought over carrots, nuts and a mojito when listening to the boisterous mix of post-punk and Arabic classics at a popular bar in Beirut’s main nightlife quarter, Gemmayze. It was an evening in February 2009, and Hajjar, one of the founders and owners of 961 Beer — 961 is Lebanon’s country code, hence the name for the first craft brewing company in the country — tried to gather his thoughts for a strategy meeting he would have with his partners the next day. Being disappointed with the quality of local beer, he had started his own brewery from scratch in 2006. The start-up phase took place under the most adverse conditions in terms of security and economic challenges. Bombs were shattering Beirut International Airport when Hajjar went ahead and registered his company. A brewing starter kit is the best way to buy all the proper equipment, and can either be bought at your local homebrew store or a homebrew website. It comes will all necessary equipment including cleaning and sanitizing solution. In addition, you will need to purchase a beer recipe kit. For beginner brewers it’s wise to start with an extract kit since it’s easier than an all grain kit. Once you’ve picked out a recipe kit that you like, you need a large enough kettle to handle four gallons of water to boil your brew. The last item on your equipment list will be your bottles. You will want to get two cases of twelve ounce pry off bottles, and enough bottle caps to cap all your bottles. Now that you have all of your equipment, you can start brewing your beer. Collect and boil three gallons of water. After the water is boiling, add the malt syrup from your kit. Remove the kettle from the burner so the syrup doesn’t burn, and stir.
