Prior to taking you first bite, the cephalic stage of gastric function begins. You smell and think of the yummy meal you ordered (gastric activity is stimulated). Now you eat: the first mechanical process for ingesting your whopper occurs in your mouth with your teeth (mastication). You take a bite via the Incisors, shred it with Canines, and crush and grind the whopper with your Premolars/Molars. Your lingual papillae say "yummy". As you chew, your saliva (containing amylase) will start to partially digest any starch in your meal. Mastication allows food to have more surface area exposed to enzymes. Saliva also has lingual lipase to digest fat after its swallowed. Saliva's amylase and lipase is the start of the chemical process of digesting your lunch. So now your whopper is mechanically broken and ready for deglutition, swallowing. The epiglottis covers your trachea, food in a bolus leaves pharynx and moves into your esophagus with help from the tongue and peristalsis. The food bolus continues to move down your esophagus, passes through the cardiac orifice, and reaches your stomach. Your swallowed food bolus has already stimulated the Gastric phase by stretching your stomach and raising its ph. Gastric glands in your stomach secrete acid and enzymes, which include HCL and Pepsin (Pepsin, specifically, is from chief cells). Now your salivary and gastric enzymes partially digest protein and small amounts of starch and fat while in your stomach (At this point your whopper bite is called Chyme, because it mixed with gastric juices). Most of the absorption for your lunch to reach the cells of your body occurs in your small intestine. The intestinal phase begins as duodenum (first part of small intestine) responds to the Chyme arriving. The duodenum eventually slows gastric secretion. Chyme in the duodenum stimulates
