Staple food
Corn- Corn is one of the most important staple foods in current Mexican cuisine. It is known as a scared plant. They are a popular street food in Mexico, although they can be and are frequently served as meal at home. Condiments such as salt, chili powder, butter, cheese, lemon juice, mayonnaise, and sour cream are usually put on corn if desired.
Salsa- A salsa is actually just a sauce, although it is most commonly associated with the red or green mix of tomatoes, onion, chili and cilantro (coriander), a typical Mexican cuisine. It is used as a dip.
Tacos- Are a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling. A taco can be made with a variety of fillings, including beef, chicken, seafood, vegetables and cheese, allowing for great variety.
Refried Beans- Are a traditional staple food of Mexico. Basically it’s a dish of cooked and mashed beans. Refried beans are prepared with verities of beans such as black beans or red beans. In a home meal, refried beans typically serve as the main food along with smaller, more strongly flavored dishes, but they may also be served as a side dish along with a larger meal, or rolled in a tortilla to form a bean burrito.
Enchilada- A roll of flour or corn tortilla with a filling inside of it covered with a chilli pepper sauce. The filling could vary in different of varieties such as beans, meat, vegetables and cheese
Totopos-It’s a Mexican cuisine. It’s flat, round or triangular corn product, basically it’s a tortilla chips that is served with salsa.
Gordita – It’s a corn cake made with corn flour. It’s baked on a comal, a pan similar to skillet. After it’s cooked, it is then allowed to dry a little to get rid of excess grease then a slit is made to leave an opening to stuff raw vegetables or salsa. The most traditional gordita in Mexico is filled with (a type of stew made with pork rind and spices).
Rice- A rice dish is an important part of most Mexican main meals. It’s often served as a side dish.

Strengths of the diet
Corn and beans, supplemented with meat, dairy products, and local fruit and vegetables—is nutritional and well suited to healthy lifestyle. Tortilla and beans provide the necessary amount of protein. Beans also give excellent amount of B vitamins, magnesium, folate, and fiber. Somehow these foods do provide them with some form of the essential nutrients. I believe that they are more healthy than us because we eat less or hardly tortilla, beans, soups, stews, and fruit-based drinks. Instead we eat candy, cakes, ice cream, snack chips, and salad dressings.
Celebrations
Day of the dead
Day of the dead is a holiday for remembering and honoring those who have passed away. It is a festive, joyous time of celebration. Day of the Dead is Mexico's most important holiday, which means they invest a lot of time and money into celebrating Dia de los Muertos (day of the dead) than any other holiday. It is celebrated on November, 2. During the Day of the Dead, people eat pan de muerto (bread of the dead), a long and flat sweet bread prepared with many eggs and sugar
Christmas
The Christmas season in Mexico begins on December 16th, when they have a celebration called Posadas, when in the villages and towns citizens recreate the journey of Joseph and Mary to Bethlehem. Every house will hold a Posada, but not all on the same night. Each family has the chance to be an innkeeper and the rest of the villagers will be the Holy Family. Just as the Holy Family did, they knock on doors and only the third house will let them in. It is nine nights of religious celebrations, followed by a party for the children which includes the breaking of a pinata. December 24th is Noche Buena or Holy Night. It is a tradition to go to Midnight Mass and then it is home for a big dinner with the family. The door of a Mexican home is always open on Christmas Eve for those who do not have a place for dinner. No one spends Christmas Eve alone. At Christmas people eat romeritos , a plant similar to rosemary or parsley served with sauce and potatoes; bacalao , dried codfish cooked and served in a sauce of tomatoes, olives, and onions; and all sorts of stuffed turkey
Mexicans shake hands when two women are meeting or a man, or when a man and a woman are meeting, they kiss each other on the cheek once. In the case of close friends and on special occasions, such as New Year's Eve, Mexican men and women hug each other, pat each other gently on the back, and then shake hands.

Eating patterns
For breakfasts Mexican would have a light breakfast of coffee/or fruit. Half way through the morning people may eat bread roll as a snack. The most important meal of the day is served between two and four in the afternoon. It consists of three or four courses: soup; rice or pasta; meat or chicken along with consists of three or four courses: soup; rice or pasta; meat or chicken. Dinner is served between eight and ten at night and consists mainly of sweet rolls, coffee, and milk. Mexican eats three meals a day with a snack in between. The bigger meal they eat is at lunch time.

Throughout the last decade and a half Mexico has struggled to maintain a stable economy, all the while trying to control the trafficking of drugs and humans across the American border. The U.S. Department of State website (2010) states Mexico is classified by the World Bank as an upper-middle-income country. Poverty is widespread (around 44% of the population lives below the poverty line) and high rates of economic growth are needed to create legitimate economic opportunities for new entrants to the work force.
