I. Company Profile and Background

A. History and Evolution Alberto's Pizza started its humble journey in Cebu. It is located in Rodriguez St., Cebu City just across a Hospital and was established on February 28, 2008. It is founded by a group of friends interested on establishing their own business to earn additional income, thus Alberto's Pizza. It is an establishment that focuses on the delivering pizza to customer's doorstep due to a small place and limited facilities. Eventually, a lot of people began to patronize their pizza because of its good quality, affordable price and great service that results to its rapid growth and success. Now they have 36 branches all over the Visayas and in Mindanao, and on August 15, 2012 they opened a new branch here in Iloilo. It is located in E. Lopez St., Jaro, Iloilo City.

B. Mission/Vision To serve the public with a good quality and very affordable pizza, and providing decent jobs to less fortunate people.

C. Organizational Structure

The figure above is the organizational structure of the restaurant. The highest position in the structure is the owner. Under the owner is the manager and supervisor. The manager is in charge of the administrative side of the business, while the supervisor is in charge of the business operation and reports to either the manager or the owner

II. Method of forecasting The company uses the judgmental method of forecasting. They use their own observation in real time in forecasting the supply needed. In case of the number of workers present, they started with 5 crews and add 1 as the hour progressed up to the peak hour then they deduct one when the peak hour passed.

III. Facility Lay-out

The vicinity is divided into 2 main areas, the dining area and kitchen.

IV. Design of Work A. Employees Responsibilities There are a total of 20 employees who works on shifts. Thirteen of them are kitchen crews which is composed of the manager, servers, a cashier, a baker, and kitchen assistants, and the other seven are riders who are responsible for deliveries, the cleanliness of the dining area and procurement of supplies from suppliers. B. Product and Service Design Alberto's main product is a wide selection of pizzas and they also offer breakfast meals from nine in the morning to two in the afternoon as well as desserts and beverages. The selection of pizza is composed 23 different varieties, from hotdogs to pepperoni, quick melt mozzarella cheese. The food is served fifteen minutes after each order and is assured to be fresh from the oven. V. Management of Quality A. Quality Management Alberto's ingredients are assured to be fresh and of good quality. They operate at a low volume, thus quality is assured. The manager also inspect each supply to assure good quality. Employees hired are trained before working on field and is required to have a health card. They also wear appropriate attires when entering the kitchen such as masks, hairnet, and aprons. Cleanliness is a top priority, the crews are obliged to mop or sweep the floor every fifteen to twenty minutes. B. Quality Control and Acceptance Sampling The manager of the establishment assures quality, as explained in the previous section, by personally buying and inspecting supplies. Ingredients such as bell peppers, mushrooms, onions etc are bought in Central Market and ingredients such as cheese, tuna, pepperoni, etc is provided by the home office. The ingredients are ordered to be used for a day to avoid spoilage and assure freshness. The cooks follow a standardized recipe to assure the customers continuing patronage. They also follows DOH policies regarding food preparation and presentation. The crews are required to be clean and to wear appropriate attire before they enter the kitchen. They are also trained to do all kinds of work required from mopping the floor to baking. There are few leftover food because food is made each order. The management does not allow the employee to reuse or consume leftover food. Alberto's also practice proper waste disposal. VI. Inventory management. A. Procurement The ingredients are procured locally. The vegetables and fruits are purchased from Central Market everyday to assure freshness. The cheese, pepperoni, ham, etc is provided by the home office in Cebu which is ordered to last a week. These stocks procured are used in a short measure of time. B. Storage The storage is divided in two areas, the cold and the dry section. The frozen and perishable goods are stored in the cold section which is the refrigerator and the flour and such are in the dry section to avoid spoilage. VII. Conclusions Alberto's Pizza here in Iloilo seems to have a stable business and is earning sufficient income but is exhibiting some potential problems such as the lack of forecasting, no definite inventory method and their location as well as theirs vicinities physical appearance in the future. a. Lack of forecasting The business has no definite forecasting used and is basing the order of their supply on their own observation. Some of their products are sometimes out of order due to the lack of ingredients because they estimated the supplies needed wrong. b. No definite method of inventory As mentioned above, they have no forecasting that results to shortage of inventory. It also observed that they have no warning system in case of low supply. c. Location and physical appearance Even though they have a good location, their space is small and uninviting. Their space lacks design that could attract customers like students, and young professionals which makes up a large portion of the market. A large percentage of their sales is from delivery which is free of charge and take outs. This causes their profit to decrease because of additional incurred expenses.

VIII. Recommendations Alberto's pizza may have stable growth because of the quality and affordable price of their product that attracts a large number of customers. For these reason the demand for their product is continuously increasing thus the need of forecasting. Forecasting helps the company to satisfy all the demands of their potential customers. On the other hand Alberto's Pizza does not have a definite forecasting method to identify the number of potential demands for them to have the equal or sufficient supply. Alberto's Pizza can use the Time Series method of forecasting which uses its past sales to predict their future sales. These can help them avoid shortage or surplus that can result to losses of supposed to be an additional income to the company. Another reason of shortage is because of no definite inventory management. The company can acquire additional inventory to serve as allowance during peak season as long as they will use FIFO method of inventory to still ensure freshness of products. Another problem of Alberto's Pizza is their small and uninviting space. As we all know, the market nowadays is compose of young professionals and students who preferred trendy and cozy places to dine in. This is the reason why a big percentage of Alberto's Pizzas' sales is compose of takeout and delivery which is free of charge. If Alberto's pizza wanted to widen the range of their customers, they need to redesign their place to make it more attractive and accommodate additional number of customer. This will help them avoid losing portion of their profit in packaging cost of takeouts and fuel on deliveries. Appendix

Stories began being written by monks and the clergy which in time turned into regular men with stores that focused on more secular matters. ...The poem I chose to write about is called “Stopping by Woods on a Snowy Evening” Written by Robert Frost. The poem is from the point of view of an old man who has been riding through the woods and stops. It is the middle of the night and he is watching the snow fall as we can plainly see from the lines “He will not see me standing here/to watch the woods fill up with snow” and “between the woods and frozen lake/ the darkest evening of the year.” To me it seems that the idea of this poem is stopping and enjoying little things in life, even things like a snowy wood in the middle of the night. Something so simple could be very beautiful if you take the time to notice it. The poem also seems to give the idea that we can enjoy little things in life but not forget our important obligations. ...The poem, “Caribbean Journal” written by Cecil Gray, centers on the theme of poverty and homelessness. The author draws an invisible line to separate two classes of persons, the homeless and the affluent. He posits rhetorical devices such as symbolism, imagery and personification to illustrate these points. He also weaves them within the construct of five stanzas supported by seventeen lines. The journal entry has three characters. Namely: the boy – the victim of poverty, the affluent persons within society and the poet himself. The poet succinctly divides these characters are we are able to visually make references from the lines drawn. The poem "Nettles" by Vernon Scannel is about the narrator showing his thoughts and feelings when his son fell in a bed of nettles. The poem shows us that their relationship was strong and that they were close. The poet uses a metaphors to share his thoughts and feelings. An example of a metaphor is when the poet compares the nettles to be "green spears." The words "green spears" makes me think the nettle are like weapons that are razor-sharp. The use of colour imagery here with the "green" isn't used for pain. The colour green links with environment in this instance it is nature that has hurt his son. Another example of a metaphor is when he compares the nettles like soldiers dying in a army " fallen dead". This suggests that he is angry and upset because the nettles hurt his son.
