วิธีทำ
ผัดดอกขจร หรือดอกโสนกับน้ำมันร้อนพอสลด ใส่ข้าวผัดให้เข้ากันแล้วจึงใส่พริกขิงปลาดุกฟู ผัดจนเข้ากัน ก่อนตักขึ้นใส่ไข่เค็มแดงคลุกพอเข้ากัน Tips * ไม่ควรใส่น้ำพริกลงไปผัดก่อนเพราะสีจะคล้ำไม่น่ากิน และน้ำพริกจะมีกลิ่นไหม้ถ้าใช้ไฟแรง เพราะน้ำพริกนี้เป็นน้ำพริกคั่ว * ดอกกุยช่ายลวกแล้วผัดน้ำมันเร็วๆ เพราะถ้าผัดนานจะสุกเกินไป หรือคลุกรวมกับน้ำพริกก็ได้ * พริกขิงปลาดุกฟูเป็นน้ำพริกสำเร็จรูปที่ซื้อได้ทั่วไป หรือซื้อที่ร้านน้ำพริกนิตยา สาขาต่างๆ เช่น บางลำพู ปิ่นเกล้า เป็นต้น

ปลากะพงขาวทอดน้ำมันมะเขือเทศ Seabass with tomato oil เนื้อปลากะพงขาวถูกนำไปทอดในน้ำมันที่นำมะเขือเทศลงไปทอดก่อนจนสีออกแดง เรื่อโดยใช้เวลาเพียง 3-4 นาที เพื่อให้ได้ความสดของปลาและคงรสชาติตามธรรมชาติไว้ แตงซุกกินีที่ผัดให้คงความกรอบ และมันฝรั่งบด ปลากะพงขาวทอดน้ำมันมะเขือเทศ

วิธีทำ * นำมะเขือเทศมาผัดในน้ำมันมะกอกคุณภาพดี โดยใช้ไฟอ่อนๆจนสุก * นำน้ำมันมาทอดปลาต่อ โดยนำเนื้อปลากะพงขาวหั่นชิ้นหนาโรยด้วยแป้ง ใส่เกลือ และพริกไทย ทอดแต่ละด้าน พอให้เนื้อออกเหลือง แล้วหรี่ไฟ ปิดฝากะทะ ทิ้งไว้ให้สุกเพียง 3-4 นาที * เสิร์ฟพร้อมมะเขือเทศที่นำมาอุ่นในกะทะอีกครั้ง แตงซุกกินี และมันฝรั่งบด

วิธีทำ

1. นึ่งปูทะเลให้สุก แกะกระดองออกล้างน้ำให้สะอาด แล้วผึ่งให้แห้ง
2. แกะเนื้อปูสับรวมกับกุ้ง ผสมรากผักชี กระเทียม พริกไทยที่โขลกละเอียดไว้แล้ว ผสมน้ำปลา และไข่ 1 ฟอง ให้เข้ากัน ชิมรสตามชอบ
3. ตักใส่กระดองปู โรยหน้าด้วยผักชี พริกชี้ฟ้าแดง เรียงใส่รังถึงนึ่งจนสุก
4. ตีไข่ 2 ฟอง นำปูลงชุบแล้วทอดในน้ำมันร้อนปานกลาง จนเหลือง แล้วนำไปใส่ตะแกรงเพื่อให้น้ำมันหยด รับประทานกับน้ำจิ้ม หรือซอสศรีราชา

วิธีทำ
1.ผสมแป้งกับน้ำเย็นจัด ๆ ไม่ต้องตีแรงจนแป้งเหลว แค่เอามือคนๆๆๆ เป็นใช้ได้ ใส่ไข่ไก่ไป 1 ใบ กะดูให้แป้งข้น ค่อนข้างไปทางเหลว แต่ไม่ต้องเหลวมาก เดี๋ยวผักจะลงจิ้มแป้งไม่ติดขึ้นมานะคะ
2.เตรียมถาดพร้อมปูกระดาษซับมันไว้ด้วย เมนูนี้เป็นของทอดที่อมน้ำมันสุด ๆ
3.ลงมือทอดผัก ได้ผักทอดแล้ว มาปรุงน้ำยำกันต่อ

วิธีทำน้ำยำ
1.นำน้ำพริกเผามาใส่หอมเผา กระเทียมเผา และพริกเผา พักไว้
2.กุ้งสดเอามาลวกน้ำร้อนนิดหน่อย ไม่ต้องลวกนานเดี๋ยวเนื้อกุ้งจะแข็งแล้วไม่อร่อย
3.ตักน้ำพริกเผาในข้อ1 ใส่ชามผสม ใส่น้ำปลา น้ำมะขามเปียก น้ำตาลปีบ และน้ำสุก แล้วชิมรสที่ชอบ
4.ใส่หัวหอมแดงและผักชีเด็ด
หากยังไม่รัปทานในทันที ควรแยกผักทอดและน้ำยำไว้ต่างหากจะเป็นการดี
หากจะรัปทานทันทีก็ต้องราดน้ำยำลงไป ผักจะได้ชุ่มน้ำทำให้รสชาติจัดจ้านขึ้นอีก

วิธีทำ

1.ล้างพริกให้สะอาดปล่อยให้สะเด็ดน้ำ เผาพริกให้กรอบ
ให้สีออกแดง อย่าให้ดำจะขม
2.หอม กระเทียมปอกเปลือก เผาให้หอม
3.โขลกพริก หอม กระเทียม และข่า ให้ละเอียด
4.ใส่เกลือ และส้มมะขามเปียกที่สับละเอียดแล้ว โขลกให้
