The famous truffle soup was created by Paul Bocuse in 1975 February 25 for the president of France, Valery Giscard d’Estaing when Bocuse was appointed ‘chevalier de la Legion d’Honneur’. The order is the highest French order for military and civil merits, established 1802 by Napoleon Bonaparte. The order is divided into five degrees of increasing distinction: Chevalier, Officer, Commandeur, Grand Officer and Grand-Croix(2). After that time, Paul bocuse has served the soup in his restaurant as “Soupe aux Truffles V.G.E”, named after president’s initials(3).This dish consists of a light chicken consommé, served in deep bowls, a few diced carrots, onions and mushrooms, the truffles, and also a little foie gras. topped with a puff pastry lid.
