Carbs
Carbs are the main source of fuel in the body, about 4 calories of energy per gram. Carbs provides energy mainly as glucose and are in two forms: simple and complex.
Simple carbs can be monosaccharide (one sugar molecule) or disaccharides (two sugar molecules). Simple carbs are absorbed very quickly creating blood sugar spikes. Glucose is the most plentiful monosaccharide and the most common disaccharides are sucrose and lactose. Simple carbs include some fruit, milk, and yogurt as well as products with sugars in them such as desserts, soda, pasta sauces, and cookies.
Complex carbs take longer to digest and don’t create blood sugar spikes. Complex carbs can be oligosaccharides which contain between three and ten sugar molecules linked …show more content…
There are saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids. All fatty acids are composed of chains of carbon atoms with attached hydrogen atoms. A saturated fat is a fatty acid that has carbon atoms attached to each other with a single bond with the maximum number of hydrogen atoms attached. An unsaturated fat is a fatty acid that has carbon atoms attached with double bonds due to a missing a pair of hydrogen atoms in the middle. A fatty acid with only one double bond is "monounsaturated" and is “polyunsaturated” if more than one pair of hydrogen atoms is missing. There is no recommended dietary allowance for fat intake, but it is recommended that fat make up between 20 to 25 percent of your calories per day and saturated fats make up no more than 10 percent of your calories per day.

• Help the body absorb fat-soluble vitamins, such as vitamins A, D, E and K as well as phytochemicals like beta-carotene and lycopene.
• Hormone production such as testosterone and estrogen
• Insulate the body
• Promote a healthy brain, which is 60 percent fat
• Provide a source of immediate and stored energy, fats provide 9 calories per gram.
• Provide essential nutrients for cell function and repair
• Transport hormones and fat soluble vitamins through the body and cell membranes

My mother has just been diagnosed a few years prior with type II diabetes and had to start directly on insulin.
