How to Grow Oyster Mushrooms the Easy Way

Welcome to my super easy guide to growing oyster mushrooms. I want to thank you for letting me be your source of knowledge on mushroom cultivation and hope you enjoy the simplicity of this method. These instructions are designed for a beginner that has interest in mushroom cultivation and has no idea where to start. The purpose of this document is to give people the step by step info they need to grow their own supply of edible mushrooms quickly and easily. With the text and pictures as a reference you should have few failures with this method, if followed to the letter. There are times of the year that failure will hit harder than others. Most failures will happen in the spring, summer, and fall. These times of the year have higher concentrations of airborne contaminants. There are many things you will need to complete this project and item’s needed will be listed for each step of the process. It should take you about 1-2 months from start to finish on this project. The reward of delicious edible mushrooms you grow your self is just around the corner.

Step 1 Obtain Supplies This is the list of supplies you will need to complete this part of the project. Most of these things can be found at the local grocery store. This is not a complete list of what you will need for the entire project. I will list at the beginning of each section what you will need for each step.
This is fine grade vermiculite but, medium and coarse grades will work as well.

* Brown Rice Flour * Vermiculite * ½ pint mason jars * Distilled Water * A big bowl and spoon * Some measuring devices * Tyvek * Aluminum Foil * Paper Towels

Go to the store and buy these things. After all these things have been gathered and moved to a clean area proceed to step 2.

Step 2 measure and combine ingredients
The recipe for the mushroom growing mix can be scaled up or down depending on the size of your personal project. The magic ratio to remember is 2/1/1 (Vermiculite/Flour/Water).

To make 12 ½ pint jars measure * 5 cups of vermiculite * 2 ½ cups of distilled water * 2 ½ cups of brown rice flour
Put the vermiculite and water in the bowl. Stir to combine and set aside for 5 min to let the vermiculite absorb the water evenly. Put the Brown rice flour in and stir to combine.

Step 3 Clean and Fill jars
For this step you will need * 12 mason jars, lids, and bands * Drill and ¼ in bit or hammer and nail * 12 squares of tyvek * Mushroom growing medium * Dry vermiculite * Aluminum foil

First we must make some jar lids with holes in them. Create 4 holes in the lids with a hammer and nail or a drill. The holes should look similar to the picture.

1. Wash and dry all of the jars, lids, and rings you plan on using. 2. Load each jar to 1/2in below rim. 3. Wipe the ½ in of glass clean of any residue left from filling jar with a paper towel. 4. Fill the rest of the jar up with dry vermiculite. 5. Put the lid (with 4 holes in it) on. Put one piece of tyvek on and install the band. 6. Put one piece of foil over the top of the jar. Repeat 11 more times.
Note! If you forget to wipe the ½ in space with a paper towel it becomes a pathway for contamination to invade your project.

Step 4 Pressure cook jars
The jars are now loaded into the pressure cooker and pressure cooked for 30 min to sterilize the jars.
Let jars stay in pressure cooker to cool overnight.
WARNING! Read your pressure cooker instructions. Not all of them operate the same way.
WARNING! Trying to quick cool jars can cause them to break.

Step 5 Inoculate Jars
For this step you will need the following supplies * Old beer or soda pop can * Alcohol (denatured and isopropyl) * Scissors * Spore syringe * 12 jars loaded and sterilized * Paper towels * Lighter * Micropore tape

1. Assemble supplies in a clean room. With your scissors and beer can in hand, cut the bottom off the can. Keep the bottom and toss the rest. 2. Take the foil off the top of the jars and throw away or recycle. Take a paper towel and wet it with isopropyl alcohol. Wipe the tyvek area on the top of the jars. 3. Place the beer can bottom on the counter so that it acts as a cup and put some denatured or isopropyl alcohol in it. Ignite the alcohol with your lighter. 4. Take your spore syringe and sterilize the needle with the alcohol flame till glowing red hot. Pull off flame and place in a paper towel sprayed with isopropyl alcohol till ready to use. 5. Grab a mason jar that you have ready and locate the holes you drilled into it. Pull the needle out of the paper towel and insert it into the holes on the jar lid. Inject ¼ cc of spore solution into each hole. 6. Place a piece of micropore tape over each injection site. 7. Repeat flame sterilization procedure for needle before inoculating each jar. 11 more to go!

Warning! Alcohol burns blue and very hot. You may not see the flame when it is lit. Do not burn yourself or your house down.
Warning! Needles are sharp. Be careful.

Note! A lighter can be substituted for the beer can homemade alcohol lamp. Be sure to wipe off the black residue left on the needle by the lighter before putting it in a jar.
Tilt needle toward glass when injecting the spores. This helps get more solution on the outside of the cake and lets the fungus grow inward.

Step 6 Build and incubation chamber
For this step you will need the following supplies * 2 plastic tubs * Submersible Fish tank heater * Thermometer * Water

1. Take one of the tubs and install the heater on the bottom of it. Fill tub with 2 gallons of water or whatever your size tub needs. 2. Put the other tub inside of the one with the water and heater in it. Place the thermometer inside. Adjust the settings on the heater until you keep the inside of your chamber at 75-80 degrees Fahrenheit. 3. Place jars inside and wait until they are fully colonized.

Note! This step should be done a few days before inoculation so that you have your temperatures set where you want them. This step could possibly be skipped if you do not have it in your budget. It will take your jars longer to colonize though. If you skip it just keep your jars in a warm place and out of the light.

Step 7 gather things for Fruiting chamber and build
Spacers
For this step you will need the following supplies * Light * Clear Tub * Tide laundry bag(not shown) * Perlite * ½ in wire welded mesh

1. Take the tide bag and fill it with 8 quarts of perlite. Fill a sink with a few gallons of water and put in about a cup of salt. Toss the perlite into the sink with the salt water to hydrate it. 2. Take your tub and drill ¼ in holes every few inches. 3. Take your wire welded mesh and cut it to fit into your tub flat. Cut some spaces out of the left over wire to hold the flat piece off the bottom about 2 ½ in. 4. Pull the perlite out of the sink and let it strain in a colander for 30 min. Place tide bag full of perlite in the bottom of the tub so it lays flat.

5. Place your 2 ½ in spacers on the tide bag. Place the wire shelf on the top of the spacers. Put the lid on the fruiting chamber. Give it about 1 day for humidification to rise in the tub. 6. Buy a florescent light and fixture. Place the light over the tub and cycle the light 12hrs on then 12hrs off.

Note! The tide laundry bag can be skipped but, I find it helps keep the perlite in one place and keeps it from making too much of a mess.

I do not have pictures of this step. You should be able to grasp it from the instructions.
Step 8 Birth Your Cakes
Fungus starting to grow.
For this step you will need * A bowl * A sink * Lids with no holes to go back on the jars * Aluminum foil

Happy day! You have waited about a month by now. The process of birthing cakes is pretty easy. 1. Pull your cakes from their dark corner and open the lids on all the jars. Throw away the tyvek and set the lids aside to be washed. 2. Take a jar and flip it upside down in the bowl you have close by. If the cake does not slide out tap it a few times inside the bowl. 3. Turn the cold water on in your sink and leave in running. Rinse out the inside of the jar. Take cake from the bowl and wipe off the dry vermiculite layer. Rinse the cake off under the running water. 4. Place cake back inside of the jar. Tear off a piece of aluminum foil and roll a ball. Place foil ball inside jar with washed cake. Fill jar with water. Place new lid on jar and secure with band. Let the cakes set for 12-24 hours in the jars.

Step 9 Filling your fruiting chamber
For this step you will need the following supplies * Aluminum foil * Vermiculite * Distilled water * Bowl * Quart mason jar band

1. Take the aluminum foil and shape it around some quart sized Mason jar lids or anything you can find that is ½-¾in deep and 3-4in around. Make one of these for each cake to sit in. 2. Take out 4 cups of vermiculite and place it in the bowl. Pour 2 cups of distilled water on it and mix. Distilled is used because this will not be sterilized in the pressure cooker. This step is called hydrating to field capacity. 3. Take the moistened vermiculite and fill each of your aluminum rounds. The vermiculite will need to be level with the top of the ring. 4. Field capacity hydration is when you squeeze the vermiculite and only a few drops of water come out.
Take the cakes out of the jars they were dunked in and dump water out Coat them all over with the moistened vermiculite. Stand each cake right side up in the aluminum round. 5. Take some more vermiculite and put about a ½in layer of vermiculite on top of each cake. 6. Your Fruiting chamber is now filled. Open the lid 3 times a day to fan air at and mist the cakes with water. In a few weeks you will have some mushrooms.

Step 10 Harvest and post flush maintenance
Well you have made it to harvest day. It is time to pick your fungus and get ready for the next flush. 1. After you pick the mushrooms from the cakes, return the cakes to the sink and wash them of the remaining vermiculite. 2. Load them back into jars and perform step 8-10 again. You can repeat this up to 4-5 times depending on how well you take care of your setup. 3. When the cakes have exhausted themselves of mushrooms start over at step 1. Enjoy your fresh mushrooms!
