Evaluation - Food Technology Gcse

...Evaluation: I chose to make a meal that contained Calcium and Vitamin D. In order to accomplish this, I made two dishes. The first, Fish in Cheese Sauce, and the second, Pistachio and Chocolate Mousse with fruit salad in Tuile Baskets. Before I made these two dishes, I researched about Calcium and Vitamin D and found out why these were important in the body and what they helped prevent. This helped me gain more insight and helped me know how important they were. Then, I found out a list of foods that contained these nutrient sin high quantities. With this, I was able to choose what dishes I was going to make. Before I chose these dishes however, using Food for a PC, I was able to know how much Calcium and Vitamin D these dishes contained. Comparing the figures to the DRVs, I was able to know what needed to be adjusted. This meant that I changed the fish (originally Cod) to Herring which had more Calcium in it. Even with this, I had not provided the entire amount of calcium needed. Also, I researched a couple of recipes that I could do. Another part of my planning was that I created a sample sensory analysis sheet that I could use for my sensory testing. This helped because with the six words I had chosen, I knew what I needed to focus on more (making it soft, savoury, etc). After all of this, using the recipe I had chosen from the internet, I made a time plan that showed how long I should take to do things. This helped me because it told me what I needed to do and how long to...

Effects of Advanced Technology to Production of Food

... EFFECTS OF ADVANCED TECHNOLOGY TO PRODUCTION OF FOOD A Review of Related Literature submitted to the Faculty of the Department of Economics Crystalgene D. Silorio August 10, 2015 INTRODUCTION The world has progressed through hunter–gatherer, agricultural, and industrial stages to provider of goods and services. This progression has been catalyzed by the cultural and social evolution of mankind and the need to solve specific societal issues, such as the need for preservation to free people from foraging for food, and the need for adequate nutrition via consistent food supply year round. These forces led to the development of the food industry, which has contributed immensely to the basis for a healthy human civilization and helped society prosper and flourish (Lund 1989). According to the Food and Agriculture Organization, our population is increasing, and we need a 70% increase in food production. We have to grow, harvest, distribute, and consume our food more efficiently to feed all those people. We are not gaining more farmers or any other resources, and the production of our food is not as fast as our growing population, so the use of technology for the innovation of food production is a great help in addressing the issue. EFFICIENCY OF TECHNOLOGY The production of food is not always the same, it also depends on our resources, area, and climate. The natural disasters we experienced also affects the production. Technology has a great impact in...

Food Technology - Food Manufacture

...materials into the manufactured food product: Mixing: The process of mixing is used to evenly distribute ingredients and transforms the ingredients into dough. Within a factory setting that is creating Chocolate Chip Cookies, all the ingredients are poured into an industrial sized mixing machine that is set to mix all the ingredients together until the dough is complete. Freezing: When freezing a product, the slower the rate of freezing, the larger the ice crystals form. This is why it is desirable to have the most rapid rate of freezing. Chocolate chip cookies that are being distributed to food service customers (e.g. restaurants and hotels) are frozen. They are put into a freeze tunnel and then flash frozen to prevent the formation of ice crystals. Freezing also stops enzymes growing and reproducing, making them retarded. While they are stoped, they are not destroyed. Heating: The type of equipment used to heat the raw material depends on the nature of the raw materials and the intensity of the heat treatment. The chocolate chip cookies that are being distributed to supermarkets and large scale shops as a finished product need to be cooked inside the factory. The factory uses radiant heat in an oven, in particular, the tunnel oven. The tunnel oven is the most commonly used type of oven within the factory setting. The baking chamber is over 100 meters long and is narrow and shallow. Heat is also used to destroy the enzymes in the food product. Large-scale Equipment...

The latter was changed to the course of Bachelor of Science in Foods and Nutrition (B.S.F.N.) in 1957. Early in 1969, there was a felt need to reorganize the Department of Home Economics to render its course more responsive to the needs of the country. Accordingly, in the school year 1970-1971, the Institution of Nutrition was first formed as an independent body from the College of Education under the Vice-Rector for Academic Affairs, and later as an adjunct of the College. Another important event in 1971 was merging of Normal School with the College of Education because of the rapidly decreasing College of Education enrolment of students in the Normal School. These societies are small compared to the others. They generally have less than 50 members. 3. Hunting and gathering societies are nomadic, which means that they move constantly in order to find food and water. 4. Members of hunting and gathering societies are mutually dependent upon each other. 5. Although there is equal division of labor among the members of hunting and gathering societies, there is division of labor based on sex. Men are responsible for hunting and women are gatherers. Pastoral Societies Pastoral societies began around 12,000 years ago. These societies rely on products obtained through the domestication and breeding of animals for transportation and food. Pastoral societies are common in areas where crops cannot be supported, (e.g., North Africa). Unlike hunting and gathering societies, pastoral societies only have to move when the land in which the animals graze is no longer usable. Pastoral societies also allow for job specialization, since not everyone is needed to gather or hunt for food. For example, while some people breed animals, others are able to produce...
