...Clinical benefit and preservation of flavonols in dark chocolate manufacturing McShea A, Ramiro-Puig E, Munro SB, Casadesus G, Castell M, Smith MA. Clinical benefit and preservation of flavonols in dark chocolate manufacturing. Nutr Rev 2008; 66(11):630-641. Chocolate is the processed form of cacao beans that undergo fundamental steps of fermentation, roasting, and milling before it is widely available to consumers. This case study examines the chemical composition of chocolate by analyzing the process of dark chocolate production from cacao beans in regards to its antioxidant flavonols content with correlation to positive health benefits. Fermentation is required to break down the bitter taste of cacao beans in its original form, but lowers the beneficial antioxidant content within the cacao beans by changing the concentrations and composition of procyanidins and flavan-3-ols. After fermentation, the beans are roasted to produce a more favorable taste through Maillard and caramelization reactions of sugars, amino acids, and peptide oligomers. The subsequent step of milling cacao beans into fragments allow flavonoids to interact with other molecules such as theobromine, caffine, and l-leucine which determines both flavor and antioxidant activity in chocolate. Other antioxidant properties have been linked to polyphenols, catechin, and epicatechin in dark chocolate made from cacao beans in addition to flavonoids. Conching is the process after milling, it is a multi-day heat...

...School has tried various tactics to reduce stress in students. One thing they have not tried, however, is to feed the students chocolate. Although critics argue that chocolate is too high in sugar and fat content to actually be healthy in the amounts that we eat it, and any perceived changes in mood or stress level are fleeting, the notion that chocolate has positive effects on physical and mental health might not be too good to be true. Shara Aaron makes the case for the physical and mental health benefits of chocolate in the book Chocolate; A Healthy Passion. To begin with, chocolate has a long history dating back to the Aztecs who used it for its medicinal properties. They served it as a drink to the royalty, in ceremonies, as sacrifices to the gods, and as currency. From central america, chocolate spread to europe and the rest of the world. Since at the time, chocolate was extremely bitter and did not taste very good, it spread because of observed medical benefits. Centuries later in the 1990s,...

...Dark chocolate is known to contain 35-200mg of caffeine and as caffeine is widely known to impact upon alertness and concentration, having a measurable stimulatory effect upon the central nervous system (Nehlig, 2012) this may also have slightly impacted upon our results. By using capsules, we were able to keep the caffeine intake to 13.6mg for the active condition, meaning that caffeine would have no effect on our participants. Similarly, although cocoa is the most concentrated source of theobromine, it has minimal impact upon the central nervous system. Additionally, using a powdered supplement had an advantage over use of fresh cocoa beans. The content of epicatechin in beans has been reported to very greatly, with Costa Rican beans containing on average 14mg more than Jamaican beans (Nehlig, 2012). We were able to precisely and consistently measure exactly how much substance went into each capsule and thus keep our results more reliable in this context. Use of the powdered supplement also means that any positive findings could also benefit those suffering from lactose intolerance who can’t consume cocoa flavanols through eating chocolate. Additionally, chocolate is rich in fats and sugar which could mean that any potential cognitive benefits are outweighed by the negative input of...

...Chapter-4: Analysis and findings of the study: Introduction: Analyzing the issues is always useful particularly when such analysis has been led with the assistance of distinctive models and tools. In this area of the study, the problems talked about in the earlier segment of the study have been analyzed. Here the expert has concentrated on what Zotter chocolate as of now doing and what it can do in future to resolve the issues with these analytical models. 4.2: International Business Problem: * 4.2.1: Ricardo’s theory of international trade: This theory represents if Zotter wants to get the necessary raw materials from its suppliers of another country, it also needs to help them. Zotter can surely help them by importing the products which they do not have much cost advantage. For example, from the edible zoo, they can send meat to those suppliers. Again, it can send other nations the cocoa husk wastage of those chocolates so that they can recycle them and make food-grade paper. Nowadays it is possible to make food-grade paper from cocoa husk. By doing this, those countries can gain cost advantage. Finding: Zotter can send their own edible zoo meat to the suppliers of other countries. Besides this, they can export the cocoa husk wastage by which those suppliers can produce food-grade paper. * 4.2.2: Uppsala Model Uppsala model is a hypothesis that helps in establishing business in other countries through internationalization. * Market Knowledge To expand...

...government controls Winston through doublethink, mutability of the past and love, even though he is a man who can maintain his private virtue, he never stood a chance. The government makes public demands on Winston through forcing him to doublethink, changing the past and love. Doublethink is the power of holding two contradictory beliefs in one's mind simultaneously, and accepting both of them. It is not lying because lying is saying something that is wrong and knowing that it is wrong but still saying it. The party forces Oceania too accept both beliefs for example one week when the chocolate ration was 30 grams and the very next week is was lowered to 20 grams. Even though the ration is lowered drastically the party holds such a great amount of power over the people and their perception, “The telescreen-perhaps to celebrate the victory, perhaps to drown the memory of the lost chocolate- crashed into ‘Oceania, ‘tis for thee’.” (Orwell 28) The party forces them to watch the telescreen and it starts to play the national anthem in celebration. Everyone around Winston is happy, but Winston keeps his believes to himself,...

...Homework 1 Readings: Predictably Irrational, Ariely: Introduction, Chapters 1-3 Paradox of Choice, Schwartz: Ch 3, p.56-62 (availability, anchoring), p. 48-51 (peak-end) 1. Many examples of irrational judgments presented in class and the readings involve subjective judgments, such as how much you would be willing to pay for something. A possible objection is that subjective judgments cannot be considered “irrational” because they just reflect individual preferences. Does it make sense to characterize a subjective judgment as “irrational”? Why or why not? Justify your answer, and explain how irrationality could or could not be assessed for a subjective judgment. Rational judgments are usually made using cost-benefit, efficient analysis....

Please do not quote without author’s permission. Patti Williams is Assistant Professor of Marketing at the Wharton School, University of Pennsylvania, 1400 Steinberg/Dietrich Hall, Philadelphia, PA 19104 Thanks to Carol Scott, Jennifer Aaker, Bob Bjork, Gavan Fitzsimons, Debbie MacInnis and Don Morrison for their generous donations of time and support to my dissertation research, upon which this paper is based. Special thanks to Jennifer for her insight and editing skills in creating this version of the paper. This research was funded in part by the Procter and Gamble Marketing Innovation Fund. Particular thanks to Chris Allen for his efforts in facilitating my relationship with P & G. Abstract Emotional advertisements have a substantial impact on consumer attitudes, as well as upon purchase intentions. However, research on the influence of emotional appeals on memory has been somewhat mixed, with some researchers asserting that they result in poor consumer memory, while others argue that if tested properly, they have a substantial impact. The current research addresses these mixed results by relying on an accessibility/diagnosticity framework to explore the effect of emotions on consumer implicit and explicit memory. Explicit memory performance is characterized as relying upon both the accessibility of memory traces...

...There have been intensive discussions in the academic field over the past several years over whether or not Knowledge Management is important to our society. Scholars and observers from many disparate subjects, such as sociology, economics or management science agree that nowadays “knowledge” is at the centre of the stage. In support to that statement, researchers have identified one key ability that is common to all successful organizations: the effective creation of relevant business knowledge and the timely dissemination of that knowledge to those members of the organization who need it (Bowman, 2002). Worldwide Chocolate Limited started out as a small chocolate bar manufacturer but knew a rapid expansion in a relatively small period of time. My subsequent report will highlight the fact that only through the implementation of a Knowledge Information System will WCL be able to preserve its core values: maintaining a high quality of product, continuous innovation and good customer service. WCL needs to improve the communication between its various departments, it has to perfect its knowledge on the different sources of supply it uses and it also has to preserve its quick response to customer needs. The linchpin of all these changes is knowledge: WCL will have to leverage knowledge in order to gain a competitive advantage. The firm currently has eight central departments, namely: Accounting, Marketing, Human Resource Management, Research and Design, Sales, Warehousing...

...marketing activities. BRAND SALIENCE Brand Salience measures awareness of the brand, how often and how easily the brand is evoked under various situations or circumstances. It is the same as brand identity i.e. Who are you? DEPTH OF AWARENESS It measures how likely it is for a brand element to come in mind i.e. ease of recognition and the ease with which it does so i.e. recall value. The Cadbury brand is associated with best tasting chocolate which includes from everything from solid blocks to chocolate filled bars and novelties. For many people , chocolate is Cadbury and no other brand will do. The core values of quality, taste and emotion supports the Cadbury brand. Consumers know that they can trust a chocolate bar that carries Cadbury branding. The swirling chocolate and „glass and a half‟ are powerful images. They both portray a desire for chocolate while the half full glass suggest core values of goodness and quality. The brand has been successful in establishing the link, in the mind of the consumer ,that Cadbury equals chocolate. BREADTH OF AWARENESS It measures the range of purchase and usage situations in which the brand element comes to mind. Branded products command premium prices. Consumers are willing to pay the premium if...

...other country. Reports at the time claimed that the secret of their long lives was yogurt, a food ubiquitous in their diets. While the age-defying powers of yogurt never have been proven directly, yogurt is rich in calcium, which helps stave off osteoporosis and contains “good bacteria” that help maintain gut health and diminish the incidence of age-related intestinal illness. Fish Thirty years ago, researchers began to study why the native Inuits of Alaska were remarkably free of heart disease. The reason, scientists now think, is the extraordinary amount of fish they consume. Fish is an abundant source of omega-3 fats, which help prevent cholesterol buildup in arteries and protect against abnormal heart rhythms. Cocoa Beverage & Dark Chocolate The Kuna people of the San Blas islands, off the coast of Panama, have a rate of heart disease that is nine times less than that of mainland Panamanians. The reason? The Kuna drink plenty of a beverage made with generous proportions of cocoa, which is unusually rich in flavanols that help preserve the healthy function of blood vessels. Maintaining youthful blood vessels lowers risk of high blood pressure, type 2 diabetes, kidney disease and dementia. Nuts Studies of Seventh-Day Adventists (a religious denomination that emphasizes healthy living and a vegetarian diet) show that those who eat nuts gain, on average, an extra two and a half years. ...Stargate Institute Executive Summary Nabisco is a company that has been in existence since 1898. During their 109 years in existence, they have grown through natural growth, mergers, and acquisitions. This has allowed Nabisco to be the leading snack maker in the world. The Oreo chocolate sandwich cookie was first introduced in Hoboken, N.J. in 1911. Oreos today are far and away the world’s most popular cookie. The Oreo family accounts for approximately 10 percent of all store cookie sales--a $3 billion market. However in recent years Nabisco has been reluctant to adapt to current market trends. The company was focusing on producing new versions of existing products to make them more convenient. Situation Analysis In 1898, the New York Biscuit Company and the American Biscuit and Manufacturing Company merged over 100 bakeries into the National Biscuit Company, later called Nabisco. Founders Adolphus Green and William Moore, orchestrated the merger and the company quickly rose to first place in the manufacturing and marketing of cookies and crackers in America. To expand their global presence and to strengthen their position in the fast-growing consumer snacks sector, Philip Morris Co. Inc. acquired Nabisco Holdings in December 2000. Philip Morris purchased Nabisco for $14.9 billion in cash plus assumed $4 million in debt. Eventually, Philip Morris integrated the Nabisco brands with its Kraft Food operations. And now it includes brands such as Chips Ahoy, Fig Newtons, Mallomars...
