Fermentation, Good or Bad?

The topic that connects all three of these articles together is the current and ongoing research of the uses of microbes in food and for nutrition purposes. Food microbiology is the study of microorganism inhabit, create, or contaminate food. Food microorganisms can be found in a various amount of ways. These microorganisms can be natural or they can be genetically modified organisms. There are also good natural microbes and bad natural microbes that we can find in the foods that we eat. It is being questioned as to whether fermented foods are okay to eat. The thought of fermented foods freaks a lot of people out. The problem with microbes, is that most people only think of the harmful disease causing microbes, …show more content…
It has been reported that fermented foods have helped with a variety of disease including Crohn’s disease, ulcerative colitis, irritable bowel syndrome, and necrotizing enterocolitis. The probiotics found in the fermentation process have also been shown to be a prevention of allergic disease in infants. These probiotics are being used as supplements to help immune system function and prevent disease causing microorganisms. The Journal of Allergy and Clinical Immunology showed that these probiotics could potentially reduce and maybe even get rid of the peanut allergy in children. To do this, they would give the probiotics to the child, with peanut butter, orally. Previous studies however have shown that probiotics alone will not reduce the peanut allergy. This would be so cool though! The latest research shows that there are several mechanisms by which probiotic microbes may produce health effects to the human digestive tract and body. They would do this by outcompeting bacterial pathogens, preventing the attachment of said pathogens to host cells, and the production of antimicrobial substances, like, organic acids and bacteriocins.
